How to make Fritters Batter

Ingredients

Bread flour                  6.12 oz (1/2 tsp)190 g
Cake flour                    2.12 oz (1/2 tsp) 60 g
Salt                                0.12 oz (1/2 tsp) 4 g
Sugar                            0.25 oz (1/2 tsp) 8 g
Milk                               9.12 oz (1/2 tsp) 312 g
Egg yolks, beaten      1.12 oz (1/2 tsp) 30 g
Oil                                  1.12 oz (1/2 tsp) 30 g
Egg whites                  2.12 oz (1/2 tsp) 60 g

PROCEDURE

1. Sift together the dry ingredients.
2. Combine the milk, egg yolks, and oil.
3. Stir the liquid into the dry ingredients. Mix until smooth.
4. Let rest until ready to use, at least 30 minutes.
5. Whip the egg whites until stiff but not dry.
6. Fold the egg whites into the batter. Use immediately.
